Fork You: 1 part meat, 2 parts veg (National Meatloaf Appreciation Day Edition)

Serious Eats has declared October 18th National Meatloaf Appreciation Day and we here at Fork You are doing out part. Thrill as Marisa makes some hippie meatloaf (no hippies were harmed in the making of this episode). Listen as John Elliot and Raina Rose serenade us. Giggle as Scott tries to be helpful.

Thanks for all teh great Fork Yous! It is always fun to watch you guys.
It’s hard to remember to season sometimes! especially when you can’t taste the food until after it is cooked.

In honor of tomorrow’s meatloaf day I’ll make my turkey version since I’m not a red meat eater. I made this recipe up last winter sometime when I had a yen for something flavorful and spicy in a loaf form. (ha! I wrote “oaf” at first instead of loaf…sometimes I do like me some flavorful and spicy oafs!)

Tamarind Turkey loaf
This is definitely not the meatloaf I grew up with!

I don’t have specific amounts for my ingredients yet, it’s fun to improvise and I have found that there is no such thing s too many veggies in this loaf!

1 pkg ground turkey
1 egg
1 zucchini, grated
1 or 2 carrot, grated
1 red pepper, diced
grated ginger
crushed garlic
minced shallots
zest and juice from 1 or 2 limes (depending on how limey you feel)
chopped cilantro
2 tsp fish sauce
Sriracha hot sauce to taste
tamarind date sauce (instead of ketchup, can be found at Indian grocery stores and maybe at asian markets or wholefoods)
breadcrumbs to hold it all together

mix it all together and make a long log form. I always use a ton of vegetables, then make a few small flattish logs since I can’t wait for it to finish cooking and figure smaller logs cook faster. I coat the logs with tamarind date sauce to give it a tasty finish.

I think *my* meatloaf would have come out better had I been serenaded with Meat Loaf. Awesome video.
