It’s great to have a video for this. I’ve tried many recipes for risotto and they vary tremendously when it comes to recommended cookware, time, and technique. The important thing is the consistency that you’re shooting for, and that’s hard to put into words. Better to film. Trader Joe’s rice and stock work well here too. I’ve tried many inferior and more expensive options, but I’ve always had good luck starting with those as a base. There are other short-grain rices that work well, but I think the best rule of thumb is that rice should come in an air-tight brick package. Avoid brands like Texmati like the plague.
