This recipe is from ‘Quick Fork: Quick and easy Mousse.’
6 ounces good quality chocolate (use your favorite)
2 cups whipping cream
1 teaspoon vanilla extract
Melt chocolate in a double boiler, removing from the heat when the chocolate is nearly finished melting (the heat of the rest will complete the melting process). In a large bowl, whip the cream and vanilla with an electric mixer (or use a stand mixer) until it is stiff. Pour melted chocolate into the whipped cream and fold to combine. Chill and serve!
It will have some streaky places, but it will taste delicious!
