Mango and Tomatillo Salsa
from 2 dips plus 1
3 large mangos, peeled and diced
4 large tomatillos, diced
3 avocadoes, diced
1 small red onion, diced
1 jalepeno pepper, diced
1 bunch of cilantro, chopped
2 limes, juiced
1 teaspoon kosher salt
Combine all ingredients in a medium bowl and stir gently just to combine, taking care not to mash the mango or tomatillo. Cover and let sit for at least half an hour before serving, to allow to the flavors to mingle. Just prior to serving, taste and adjust flavorings to suit your palate (add more salt or lime juice, or add a dash of sugar if the mixture is too tart).
Serve with tortilla or pita chips.
